I think you could start by watching black clover, if you manage to survive Asta's voice for the first few chapters, everything will go smoothly and you'll get hooked on anime in general.

Don't watch fantasy anime it's lame, watch animes about real life/ history. Vinland Saga is goated for exemple it's about vikings, or Kaiji which is about gambling or also The Fable about a retired killer.

Can vouch for Jujutsu Kaisen, Demon Slayer and Solo Leveling

Solo leveling is fun te start you can also start with any of the populair ones but don't start with something with a lot of episodes like Naruto or One Piece
